Cornish Game Hens with Cider-Sage Sauce

Tent birds with aluminum foil to keep warm. I don’t recommend skipping the step of letting the Cornish hens marinate with the rub overnight. This provides enough time for the birds to absorb the flavors of the rub and helps them get tender and juicy. When roasting poultry, it is best to have a roasting pan.
Cornish Hens with Lemon and Herbs
With the oven rack in the center position. Saute 1/2 c of yellow onion and 1/2 c of bell pepper for approximately three minutes. Onion and bell pepper, and saute for approximately three minutes. Use any of your favorite seasonings.
- Stuff each hen with 3/4 cup stuffing.
- Combine the remaining 1/4 cup maple syrup with the jam, melted butter, soy sauce, ginger, and salt and pepper to taste.
- Remove the hens from the brine, pat dry, then cut the backbone off of the hens.
